We shared Joni's fave 5 on our Instagram today. She mentioned how she "goes to bed dreaming of her husband's kefir and granola" so I asked her to share the granola recipe (I will never make Kefir so I didn't ask for that recipe -lol). I love a recipe that isn't exact and leaves room for improvisation. I can't wait to give this recipe a try!

Recipe is not exact... this granola is like chili. We just keep throwing stuff in it each week and don't measure and it always turns out delicious!
8 oz Organic Coconut Chips
1/2C Cacao Nibs
1/2C Chia Seeds
4C Kasha (roasted buckwheat groats)
You can find buckwheat grout at Jimbos or online.
2 Tsp Cinnamon
1 Tsp Cardamom
1C Coconut Nectar (depending on sweetness you can add more or less)
2C Pumpkin Seeds
1C Shaved Almonds
2C Golden Flax Seeds
Sea Salt to taste
Mix all together... keep tasting while you mix and add more vanilla, salt spices, etc. as needed. Bake on parchment-lined cookie sheets at 250 until golden brown and crunching. Ovens vary so keep checking.
